Prep

Paste

  • Toast:
    • 1 tsp cumin
    • 1 tsp coriander seeds
    • 2 cardamom pods (discard seeds))
  • 1 inch ginger
  • 6 cloves garlic
  • 1 green chilli
  • 2 red chili dried
  • 3 tbsp Chopped coriander stems
  • 2 heaped Tsp turmeric powder
  • 2 heaped Tsp coriander powder
  • Grind with some water to a smooth paste

Veggies and Accompainments

  • 1 large carrot
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 100 gms Baby Bellas
  • Handful Cilatro
  • Roast 1/4 cup peanuts
  • 1 clove garlic, sliced and shallow fried

Make Soup

  • Heat a pan with oil,
  • Saute paste till oil starts leaving the sides
  • Saute
    • Mushrooms
    • Rest of Veggies
  • Add 1 can of coconut milk (unsweetened)
  • Add 1 tbsp water and 1 tbsp besan to a bowl and add to make the curry reach a thick consistency.
  • Add more water as required.
  • Boil for 10-15 mins
  • Add lime juice from 1 lime
  • Add spinach just before serving.
  • Serve Konjac Noodles in a bowl, top with soup, chili oil, peanuts, lime, cilantro
