Paste
- Toast:

1 inchginger6cloves garlic1green chilli2red chili dried3 tbspChopped coriander stems2 heaped Tspturmeric powder2 heaped Tspcoriander powder- Grind with some water to a smooth paste

- Roast
1/4 cuppeanuts 1 clovegarlic, sliced and shallow fried
Make Soup
- Heat a pan with oil,
- Saute paste till oil starts leaving the sides
- Saute
- Mushrooms
- Rest of Veggies
- Add
1 canof coconut milk (unsweetened) - Add
1 tbspwater and1 tbspbesan to a bowl and add to make the curry reach a thick consistency. - Add more water as required.
- Boil for
10-15 mins - Add lime juice from
1lime - Add spinach just before serving.
- Serve Konjac Noodles in a bowl, top with soup, chili oil, peanuts, lime, cilantro
