Ingredients

Tofu Patties

  • 1 14oz package extra firm tofu
  • Avocado oil
  • 1 jalapeño, minced
  • Kosher salt
  • 1 scallions, thinly sliced (white and green portions separated)
  • 1 tbsp tamari
  • 1 tbsp plant-based mayo
  • 1 tsp dijon mustard
  • 1 tsp steak seasoning
  • 1 tsp garlic powder
  • Zest of 1 lemon
  • Juice of 1/2 a lemon
  • 1 small zucchini
  • 3 tbsp minced cilantro
  • 3/4 cup panko bread crumbs
  • 1 avocado sliced

Cilantro Sauce

  • 2 tbsp olive oil
  • 4 cloves garlic, crushed
  • 1 jalapeño, roughly chopped
  • 1 tbsp white wine vinegar
  • 2 tsp agave syrup
  • 1 tsp yellow/white miso paste
  • 2/3 cup fresh cilantro leaves, roughly chopped

Serve

  • 4 cups of mixed green
  • 1 tbsp EVOO
  • 1 tbsp Balsamic Vinegar
  • Salt & Pepper, to taste
  • 1 tbsp Pumpkin Seeds
  • 1 tbsp Hemp Seeds

Steps

  • Press tofu with kitchen towel to remove excess moisture; wrap it in a towel and set aside.
  • Heat 2 tsp oil in a large skillet over medium-low. Add jalapeño, and a pinch of salt; sauté 3-4 minutes until softened. Stir in scallions; cook 2 minutes until soft.
  • Crumble tofu into the pan and stir to coat. Spread out; cook undisturbed 2-3 minutes. Stir, spread, and cook another 2-3 minutes. Add tamari sauté 1-2 minutes until absorbed. Remove from heat; cool 10 minutes.
  • Grate zucchini. Firmly squeeze out excess liquid.
  • In a large bowl, whisk mayo, mustard, steak seasoning, garlic powder, lemon zest, and lemon juice. Add tofu mixture, zucchini, cilantro, and panko. Mix until combined, then squeeze with hands to form a cohesive mixture. Add more panko, if needed.
  • Scoop 1/3 cup portions. Firmly shape into six 3/4-inch thick patties. Optional: Press patties into extra breadcrumbs to coat.
  • Air fry at 400 F for 8 mins on each side till crispy and brown
  • Heat 2 tbsp olive oil in a small sauce pan over medium-low heat. Add 4 garlic cloves and stir occasionally until golden, about 2-3 minutes.
  • To a blender cup, add and blend on high until smooth.

    • remaining jalapeño,
    • zest and juice of the second lime,
    • white wine vinegar,
    • agave,
    • miso paste,
    • 1/3 cup cilantro,
    • A pinch of salt.
  • Prep the mixed greens
  • On a bed of mixed greens serve the Tofu Patties, drizzled with Cilantro Sauce, Avocado, Pumpkin Seeds and Hemp Seeds
